Hosted at the iconic Odessa @ Leaver’s Hotel, this special dinner will showcase seasonal local ingredients and perfectly good ‘rescued’ produce—transforming them into a delicious three-course menu that’s all about flavour, community, and reducing waste.

Founder, Happy Scraps
Rachel is a dedicated holistic farmer from Smeaton, Victoria & founder of Happy Scraps, with over 30 years of experience in the hospitality and events industries. Her passion lies in reducing food waste and creating sustainable, community-driven solutions that pave the way for a better future. As a firm believer in protecting the environment for future generations, Rachel works tirelessly to promote ethical consumption and healthier, more conscious food practices. Through her innovative Happy Scraps projects, she is committed to ensuring that our children inherit a greener, more sustainable world.

Chef, Harvest Cafe
Currently chef at Harvest Cafe in Daylesford, Lena trained at Ballymaloe, a 'paddock to plate' cookery school set on a 100 acre organic farm in Ireland. Lena has worked as a chef for over 10 years. While running her own kitchen ViaLuna in a custom build tiny home, she loved the challenge of extreme local, seasonal and no-waste cooking up tantalising, nourishing, healthy meals. As a longterm volunteer with a kitchen/garden program at the public school she inspired the kids to grow, cook and enjoy fresh food made from scratch. Trained in permaculture design Lena holds the three principles earth care, people care and fair share very high.

Jason, a passionate foodie who loves a good char, takes great pride in creating food that is both delicious and nourishing. He places a strong emphasis on sourcing ingredients, prioritizing organic and locally grown produce to support a thriving lifestyle. With a love for cooking over fire and a passion for dishes inspired by flavors from around the world, he brings a unique and dynamic approach to every meal.

Scraps-to-Table Take-Home Meals
Our $5 take-home meals are freezer-friendly, affordable, and made from surplus ingredients that would have otherwise gone to waste. These meals offer a practical solution for busy families and individuals who want to eat healthy without breaking the bank. By purchasing these meals, community members not only feed their families but also help tackle the issue of food waste head-on.
Green Plate Dinners
Once a month, we host a Green Plate Dinner, a community gathering that features a multi-course meal made from rescued ingredients. These dinners promote the values of sustainability and resourcefulness, while also bringing people together around the shared joy of food. It’s a chance to connect with others, learn about reducing food waste, and enjoy a restaurant-quality meal for a fraction of the price.

The Happy Plates Project
Our flagship project offers $5 meals to schools, providing hot, nutritious, and locally-sourced meals that everyone can enjoy. These meals feature fresh produce that may not meet supermarket standards, yet are still healthy and delicious. We prioritise inclusivity by catering to various dietary needs and preferences, ensuring that every student or employee can sit down to a healthy meal that’s also good for the planet.

Scraps Packs
Our $10 Scrap Packs are seasonal veggie packs that have been saved from becoming waste. These packs come with easy-to-follow recipe cards, encouraging families to get creative in the kitchen while using every part of the produce. It’s a fun and affordable way to fill the fridge and make delicious, healthy meals.
